Dish of the month for January

Delicate, elegant and full of alpine character: char is a wonderful fish for simple recipes, where careful cooking brings out its natural flavour.

Ingredients for 4 people:

  • 4 char fillets with skin
  • 1 organic lemon
  • 2–3 tablespoons flour
  • 2 tablespoons clarified butter
  • salt
  • freshly ground black pepper
  • optional fresh chives
  • a few lemon wedges for serving

Preparation:

Remove any remaining bones carefully and pat the fillets dry with kitchen paper. Lightly score the skin so the fillets keep their shape while cooking. Season with salt, pepper and a little lemon juice. Then dust only the skin side lightly with flour and shake off any excess.

Method:

Heat a frying pan over medium heat and add the clarified butter. Place the fillets in the pan skin side down and cook them gently until the skin becomes golden and crisp. When the fish is almost cooked through, remove the pan from the heat, turn the fillets carefully and let them finish cooking on the flesh side for about 2 minutes. Serve immediately, adding fresh chives and lemon wedges if desired.
